Why Eat Gluten Free?

More and more people are being diagnosed each year with wheat and gluten intolerance. In order to find relief from their symptoms, they have no option by tot switch to a diet that is completely free from wheat or gluten.  Gluten free diets are also recommended for sufferers of celiac disease, gluten intolerance, and Lyme disease.  Gluten free eating has also been reported to help some migraine sufferers reduce the frequency of headaches, and even parents of some autistic children have reported positive results after switching to a gluten free diet.

So, what’s it all about? A gluten free diet is one that that cuts out all types of food containing gluten. Gluten is a protein compound found in several grains, most notably wheat, barley and rye. Around the world, gluten is an important source of protein, not only as a food source, but also as an additive to foods that are lower in protein. Gluten is what makes bread dough stretchy and elastic, and what makes bagels and pizza dough so nice and chewy.

Unfortunately, some people seem to have problems processing gluten, and it’s causing health problems for many.  The solution, as mentioned, is to change to a gluten free diet.  However, it becomes very difficult when so many foods contain some form of gluten, often in places you wouldn’t think to look – for example, many fried foods are breaded with flour made from wheat which contains gluten.
